It now has a name
After taking you along in recent weeks with thoughts, conversations, sketches, and decisions regarding the innovations at the future Tides Boutique Hotel, the moment has now come where we would like to introduce you to our new restaurant AMBER . Not just as another space in the Tides Boutique Hotel, but as an independent place and gastronomic concept. We have not planned AMBER as a classic restaurant, but as a place that adapts to your rhythm. It is a space between calm and energy, changing from morning to evening.
AMBER – a name that shines
The name AMBER felt completely right for us. It is derived from amber – warm, golden, shaped by the sea. This is exactly the atmosphere we want to create: a place where you immediately feel welcome, whether you are at home here or visiting our North Sea coast as a guest.
A place between day and evening
AMBER arises from the desire to try something new. We have not planned AMBER as a classic restaurant, but as a place that moves with the day. Open and light in the morning, calmer and more atmospheric in the evening. A meeting point on the New Way, allowing space for what you need right now - for a quick coffee, for a break in between, for a cozy evening, or a refreshing cocktail.
We like the idea that you don’t have to decide when and how to come here. AMBER is there when you are.
AMBER by day – lightness for everyday life
During the day, AMBER belongs to everyday life in all its facets. Whether you stay for a cozy breakfast, are looking for a light snack during your lunch break, or grab a smoothie to go – AMBER should be an uncomplicated anchor point in daily life. We work closely with the Norder coffee manufactory to serve you really good coffee. In addition, there are fresh pastries from our bakery and light cuisine for the day.
AMBER by evening – when the day softens
In the evening, the atmosphere changes. The light becomes warmer, and the café transforms into a restaurant with bar flair and creative drinks. Culinary-wise, our heart beats for the “Wild Homeland Cuisine.” This means for us: Our kitchen team uses what the season offers and reinterprets it with inspirations from around the world. We cook in the rhythm of the seasons and value collaboration with local suppliers. Our kitchen follows a simple idea: It should bring joy. Dishes that are recognizable and can also surprise.
Spaces in transition
As we have been sharing almost daily with you through our social media channels in recent weeks, the gastronomic spaces are currently undergoing fundamental changes. We have already reported on the new centerpiece of AMBER - the central counter - around which everything revolves. We have chosen natural materials for the design, such as warm oak floorboards and a fresh terrazzo floor. The spaces are designed to be more open and accompany the ambiance with bright to warm color tones. We are particularly excited about the small windows in the back wall – they provide a view into our kitchen and make the craftsmanship of our chefs visible to you. The future main entrance will lead through today’s “Wolbergs,” right into the new happenings.
We look forward to April
We are at the beginning of something new and are looking forward to the opening in April. Even if a delivery date can sometimes come up during the final touches in construction, the creative renovation phase is going well. We owe this mainly to our dedicated team, the various craft businesses from the region, and of course the close architectural support that is making our vision of AMBER a reality step by step.
We can hardly wait to welcome you to Amber.
Warm regards,
Martina Haver-Franke & Björn Haver with the entire team
